Quick Apple upside down Tea Cake

Quick and easy to prepare and LOW FAT too!

Ingredients

  • 5 apples peeled and diced
  • 1/4 cup of brown sugar
  • sprinkle of cinnamon to taste
  • 3 table spoons of margarine or butter
  • 2 eggs
  • 1 1/2 cups of self raising flour
  • 1/2 cup castor sugar
  • 1/2 cup of milk
  • 1 teaspoon of vanilla essence

Instructions

  1. Add diced apple, brown sugar and cinnamon to a bowl, mix lightly and add to a greased 20cm round baking tin.
  2. Add sifted flour, castor sugar, 2 eggs, vanilla essence, milk and margarine in a large bowl, beat for 3 minutes.
  3. Pour mixture over apples.
  4. Bake for 30 to 49 minutes on 170c fan forced
  5. Serve with cream or icecream
